I ate well today. Really well.
In fact I have a new “keeper” of a recipe.
For breakfast I started off the day with a bowl of Kashi Go Lean Crunch mixed with Kashi Cinnamon Autumn Wheat, topped with sliced banana and organic milk.
Then for lunch I heated up an Amy’s Frozen Vegetarian Lasagna. This is sooooo good. Especially served over a bed of spinach and topped with parm.
For dessert I had dates. Seriously, so good, I checked the ingredients twice for sugar. Surprisingly the only ingredient is organic dates. Wow!
Snack today was an organic chocolate chip granola bar and a clementine.
Dinner was the star of the day. I made tacos for me and Matt. Matt got the traditional meat-filled tacos, but I made myself something a bit special and a bit more healthy!
Enter……..Sweet Potato and Black Bean Tacos!!!!!
So lovely.
I nuked half an organic sweet potato for 5 minutes and then mashed it up with a fork. To the potato I added a sprinkle of chili powder, a drizzle of organic honey, and 2 shakes of hot sauce. I mixed this all up and used the sweet potato as the “meat” of my taco.
I then topped the potato with some mexican black beans (from a mix I got at Target by Archer Farms), chopped spinach, chopped tomato, chopped onion, organic shredded mozzarella, and Ortega.
Organic Spanish Rice and sour cream on the side.
I was worried as I bit into my taco that I would be missing the flavor of he spiced up ground beef, but truly this was so delicious I didn’t miss it at all. The sweetness of the potato mixed so well with the beans and the toppings. I give this concoction an enthusiastic 2 thumbs up!
For dessert I had a bit of So Delicious Mint Marble topped with vegan carob chips.
Consumed while I sobbed my way through My Sister’s Keeper. Wow, was that a tear-jerker. I read the book a while back, and truly that was better, but the movie did a really nice job telling the story (even with a different ending).








Yum! I love the idea of sweet potato tacos! I might have to try some in a wrap today…thanks for the great idea.
