Good Evening!! Is anybody else excited for The Biggest Loser tonight? I actually have double the pleasure tonight because I still have to catch up from last week’s episode that I DVR’d. I’m rooting for Amanda…so I hope she is still headed for that finale.
Here was another good day of pretty healthy eating.
For breakfast I enjoyed a mix of things that were easy to pack and take to work. A peach yogurt, Kashi Crunch, and a banana.
For lunch I had a beast of a salad. I can’t eat big salads without channeling my inner Fitnessista.
Copious amounts of chopped spinach, romaine, carrots, tomatoes, and onions, topped with leftover mexican black beans, mexican rice, organic cheese, Ortega, and sour cream.
The salad was delcious but the strong onion flavors left me wanting someting else.
So I munched on organic dates.
Then the bag of m&ms I got as a favor at my cousin’s bridal shower over the weekend.
And finally a clementine.
And then I was satisfied.
For dinner I had a chicken tenders basket.
Done my way.
Chicken Tenders Morningstar Veggie “Chicken” Nuggets
French Fries “Cheetahs”
Biscuit with Butter Ezekial English Muffin topped with Naturally More & Pumpkin Butter
This dinner was simply amazing and truly, so much better than any chicken tender dinner that I could have picked up from a restaurant. Bonus…this meal only took 30 minutes from start to finish!

With some decaf hot tea.
Bliss. Bliss. Bliss.
Off to watch the Biggest Loser and then lights out. I’m going to the gym BEFORE WORK tomorrow!

Your mexi-salad sounds great! I love putting taco fillings on a salad…they go together so well.
Hope you enjoyed the Biggest Loser last night…I am totally inspired as usual! I just figured out I am working during the finale next week…thank goodness for DVR!
