<p>A Pumpkin Pie Smoothie started off my day.  It was really good, and satisfied my craving for a cold breakfast and pumpkin.</p>
<p>In the mix:</p>
<ul>
<li>Canned pumpking, about 2/3 cup</li>
<li>1 cup of organic milk</li>
<li>1 T ground flax</li>
<li>1 T Chia seeds</li>
<li>generous shakes of allspice and cinnamon</li>
<li>generous squeeze of honey</li>
</ul>

<p>Lunch was leftovers from last night&#8217;s dinner.  Appetizers of organic carrots.</p>

<p>Consumed while these bad boys heated up. Chicken Tetrazzini and Steamed organic broccoli.</p>

<p>This Chicken Tetrazzini was wonderful&#8230;even better the second day!</p>
<p>Here is the recipe:</p>
<ul>
<li>2 cans of cream of (mushroom, chicken or celery)</li>
<li>1 1/2 c. chicken/turkey broth</li>
<li>1 1/2 shredded cheddar cheese (I used organic)</li>
<li>1/2 c Parmesan cheese</li>
<li>shredded cooked chicken (I used 1 lb. of organic)</li>
<li>Spaghetti noodles (I used a box of wheat organic noodles.)</li>
</ul>

<div>Mix soup, broth, cheddar cheese together add chicken/turkey then cooked spaghetti. Pour into 13&#215;9 baking dish sprinkle Parmesan cheese on top.</div>
<div>Bake at 350 for 45 min.</div>

<p>The afternoon snack-pack consisted of organic dates that will be topped with Naturally More and a bit of punkin&#8217; buttah&#8217;, two clems and four Trader Joes Gingermen.</p>

<p>Not sure if there will be an evening post, or even pictures of my evening meal.  I am heading to my mother-in-laws to spend the night as central Ohio is set to get bombarded with a slushy-icey mixed mess right at evening rush hour.  My mother-in-law lives super close to our office and said I could come home with her so I didn&#8217;t have to make the long commute home.</p>
<p>So dinner tonight will be what she and I come up with. My goal is just to eat enough to feel satisfied and if I have control over my meal (i.e. we carry out or eat out) I will steer towards healthy options. And I&#8217;m not going to stress over getting in a workout. If I can make it to the gym before the weather hits, great, and if I can&#8217;t, that is ok too.</p>
<p>I&#8217;ll let you know tomorrow how my evening pans out if I don&#8217;t post again this evening.</p>

<p>Lunch was reaallly good, like exceeded all expectations kinda good.  I tried my first Amy&#8217;s Organic Soup&#8211;the Low fat Vegan Split Pea Soup variety.  Amy&#8217;s got it going on! This soup was fantastic and I swear I could pass it off as homemade!</p>

<p>Here was another good day of pretty healthy eating.</p>
<p>For breakfast I enjoyed a mix of things that were easy to pack and take to work.  A peach yogurt, Kashi Crunch, and a banana.</p>

<p>For lunch I had  a <a href="http://www.thefitnessista.com">beast</a> of a salad. I can&#8217;t eat big salads without channeling my inner Fitnessista. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Copious amounts of chopped spinach, romaine, carrots, tomatoes, and onions, topped with leftover mexican black beans, mexican rice, organic cheese, Ortega, and sour cream.</p>
<p>The salad was delcious but the strong onion flavors left me wanting someting else.</p>
<p>So I munched on organic dates.</p>

<p>This dinner was simply amazing and truly, so much better than any chicken tender dinner that I could have picked up from a restaurant.  Bonus&#8230;this meal only took 30 minutes from start to finish!</p>

<p>Then for lunch I heated up an Amy&#8217;s Frozen Vegetarian Lasagna.  This is sooooo good. Especially served over a bed of spinach and topped with parm.</p>

<p>For dessert I had dates.  Seriously, so good, I checked the ingredients twice for sugar.  Surprisingly the only ingredient is organic dates. Wow!</p>

<p>Snack today was an organic chocolate chip granola bar and a clementine.</p>

<p>Dinner was the star of the day.  I made tacos for me and Matt.  Matt got the traditional meat-filled tacos, but I made myself something a bit special and a bit more healthy!</p>
<p>Enter&#8230;&#8230;..<strong>Sweet Potato and Black Bean Tacos</strong>!!!!!</p>

<p>So lovely. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I nuked half an organic sweet potato for 5 minutes and then mashed it up with a fork.  To the potato I added a sprinkle of chili powder, a drizzle of organic honey, and 2 shakes of hot sauce.  I mixed this all up and used the sweet potato as the &#8220;meat&#8221; of my taco.</p>
<p>I then topped the potato with some mexican black beans (from a mix I got at Target by Archer Farms), chopped spinach, chopped tomato, chopped onion, organic shredded mozzarella, and Ortega.</p>
<p>Organic Spanish Rice and sour cream on the side.</p>

<p>I was worried as I bit into my taco that I would be missing the flavor of he spiced up ground beef, but truly this was so delicious I didn&#8217;t miss it at all.  The sweetness of the potato mixed so well with the beans and the toppings. I give this concoction an enthusiastic 2 thumbs up!</p>
<p>For dessert I had a bit of So Delicious Mint Marble topped with vegan carob chips.</p>

<p>Consumed while I sobbed my way through <em>My Sister&#8217;s Keeper</em>. Wow, was that a tear-jerker.  I read the book a while back, and truly that was better, but the movie did a really nice job telling the story (even with a different ending).</p>
