Still Lovin’ the Punkin’

Happy Tuesday from chilly Ohio!

A Pumpkin Pie Smoothie started off my day.  It was really good, and satisfied my craving for a cold breakfast and pumpkin.

In the mix:

  • Canned pumpking, about 2/3 cup
  • 1 cup of organic milk
  • 1 T ground flax
  • 1 T Chia seeds
  • generous shakes of allspice and cinnamon
  • generous squeeze of honey

Lunch was leftovers from last night’s dinner.  Appetizers of organic carrots.

Consumed while these bad boys heated up. Chicken Tetrazzini and Steamed organic broccoli.

This Chicken Tetrazzini was wonderful…even better the second day!

Here is the recipe:

  • 2 cans of cream of (mushroom, chicken or celery)
  • 1 1/2 c. chicken/turkey broth
  • 1 1/2 shredded cheddar cheese (I used organic)
  • 1/2 c Parmesan cheese
  • shredded cooked chicken (I used 1 lb. of organic)
  • Spaghetti noodles (I used a box of wheat organic noodles.)
Mix soup, broth, cheddar cheese together add chicken/turkey then cooked spaghetti. Pour into 13×9 baking dish sprinkle Parmesan cheese on top.
Bake at 350 for 45 min.

The afternoon snack-pack consisted of organic dates that will be topped with Naturally More and a bit of punkin’ buttah’, two clems and four Trader Joes Gingermen.

Not sure if there will be an evening post, or even pictures of my evening meal.  I am heading to my mother-in-laws to spend the night as central Ohio is set to get bombarded with a slushy-icey mixed mess right at evening rush hour.  My mother-in-law lives super close to our office and said I could come home with her so I didn’t have to make the long commute home.

So dinner tonight will be what she and I come up with. My goal is just to eat enough to feel satisfied and if I have control over my meal (i.e. we carry out or eat out) I will steer towards healthy options. And I’m not going to stress over getting in a workout. If I can make it to the gym before the weather hits, great, and if I can’t, that is ok too.

I’ll let you know tomorrow how my evening pans out if I don’t post again this evening.

Amy’s Got it Going On

Happy Wednesday!

Breakfast today was a repeat but never the less stellar combination of Kashi Crunch, Kashi Cinnamon Autumn Wheat, Banana, Organic Milk.

Pre-Lunch Appetizer of organic baby carrots.

Lunch was reaallly good, like exceeded all expectations kinda good.  I tried my first Amy’s Organic Soup–the Low fat Vegan Split Pea Soup variety.  Amy’s got it going on! This soup was fantastic and I swear I could pass it off as homemade!

Served with something I’ve been dreaming of since last night’s dinner.  Ezekiel English Muffin topped with Naturally More and Trader Joe’s Pumpkin Butter.

I didn’t make it to the gym this morning…I blame a warm bed and no sun-light.

Chicken Tenders My Way

Good Evening!! Is anybody else excited for The Biggest Loser tonight? I actually have double the pleasure tonight because I still have to catch up from last week’s episode that I DVR’d. I’m rooting for Amanda…so I hope she is still headed for that finale.

Here was another good day of pretty healthy eating.

For breakfast I enjoyed a mix of things that were easy to pack and take to work.  A peach yogurt, Kashi Crunch, and a banana.

For lunch I had  a beast of a salad. I can’t eat big salads without channeling my inner Fitnessista. 🙂

Copious amounts of chopped spinach, romaine, carrots, tomatoes, and onions, topped with leftover mexican black beans, mexican rice, organic cheese, Ortega, and sour cream.

The salad was delcious but the strong onion flavors left me wanting someting else.

So I munched on organic dates.

Then the bag of m&ms I got as a favor at my cousin’s bridal shower over the weekend.

And finally a clementine.

And then I was satisfied. 🙂

For dinner I had a chicken tenders basket.

Done my way.

This dinner was simply amazing and truly, so much better than any chicken tender dinner that I could have picked up from a restaurant.  Bonus…this meal only took 30 minutes from start to finish!

Bliss. Bliss. Bliss.

Off to watch the Biggest Loser and then lights out.  I’m going to the gym BEFORE WORK tomorrow!

A Night of “Keepers”

I ate well today.  Really well. 🙂 In fact I have a new “keeper” of a recipe.

For breakfast I started off the day with a bowl of Kashi Go Lean Crunch mixed with Kashi Cinnamon Autumn Wheat, topped with sliced banana and organic milk.

Then for lunch I heated up an Amy’s Frozen Vegetarian Lasagna.  This is sooooo good. Especially served over a bed of spinach and topped with parm.

For dessert I had dates.  Seriously, so good, I checked the ingredients twice for sugar.  Surprisingly the only ingredient is organic dates. Wow!

Snack today was an organic chocolate chip granola bar and a clementine.

Dinner was the star of the day.  I made tacos for me and Matt.  Matt got the traditional meat-filled tacos, but I made myself something a bit special and a bit more healthy!

Enter……..Sweet Potato and Black Bean Tacos!!!!!

So lovely. 🙂

I nuked half an organic sweet potato for 5 minutes and then mashed it up with a fork.  To the potato I added a sprinkle of chili powder, a drizzle of organic honey, and 2 shakes of hot sauce.  I mixed this all up and used the sweet potato as the “meat” of my taco.

I then topped the potato with some mexican black beans (from a mix I got at Target by Archer Farms), chopped spinach, chopped tomato, chopped onion, organic shredded mozzarella, and Ortega.

Organic Spanish Rice and sour cream on the side.

I was worried as I bit into my taco that I would be missing the flavor of he spiced up ground beef, but truly this was so delicious I didn’t miss it at all.  The sweetness of the potato mixed so well with the beans and the toppings. I give this concoction an enthusiastic 2 thumbs up!

For dessert I had a bit of So Delicious Mint Marble topped with vegan carob chips.

Consumed while I sobbed my way through My Sister’s Keeper. Wow, was that a tear-jerker.  I read the book a while back, and truly that was better, but the movie did a really nice job telling the story (even with a different ending).
